Obsession-with-Sweet Potatoes Mash

Ingredients

  • 2 1/2 pounds sweet potatoes, peeled and chopped
  • 1 cup chicken stock
  • 1/4 cup honey
  • Juice of 1 lemon
  • Salt and pepper
  • Freshly grated nutmeg, to taste

Yields: Serves 4-6

Preparation

Boil potatoes until tender. Drain and return to hot pot then mash with stock, honey and lemon juice. Season with salt, pepper and nutmeg to taste.

So here I started with some peeled potatoes.

Cubed them into smaller pieces.

Boiled them until tender.

Drained potatoes and added honey.

Added stock.

And nutmeg.

Mashed up the potatoes and mixed in all the ingredients. They are so easy to make and they are super tasty. I love sweet potatoes anyway (and they are so healthy)…and I love the added sweetness from the honey and the warmth that the nutmeg adds.

I had read somewhere recently that mashed potatoes were the newest add on for burgers-so I decided to take that inspiration and make my own sandwich. Spread a generous amount of mashed sweet potatoes on bread.

The meat is rotisserie chicken from the market-fully cooked and I cut it into large pieces.

Voila! Super delicious!! Be creative-try this sandwich or make one of your own!
